This beautiful brie is lovingly cold smoked over whisky cask chippings & juniper berries. Smoking cheese is an art in itself. Consider burning fires, and yet, Vincent manages to control them to an art allowing only a cold whisp of smoke to flavour the cheese - very slowly in order to ensure flavour and yet not smoulder the cheese. Vincent hand peppers every single wedge of brie he produces.
